Vintage & Winemaking Notes: A drier than normal winter in 2016 meant budburst happened 2 weeks earlier than usual. Normally this put us at slight risk to frost but some spring rainfall helped the frost stayed away and ensured healthy growth in the vines. While it was a dry growing season, maximum temperatures were still moderate and the harvest dates for all varieties ended up falling back to the their expected times, not earlier as experienced in other grape-growing regions. The Hilltops region is blessed with mostly drier and warmer days with some cooling relief at night due to its continental position. This fruit was harvested in the coolness of the early morning before undergoing ferment on skins in stainless steel tanks. The wine was pumped over twice daily to build colour and structure. The Cabernet Sauvignon and Merlot was pressed into old French oak. Maturation was for 10 months before blending and bottling.
